How can I do if I want to fill a schedule_function everyday except Friday for example?

For this I would suggest scheduling the function for every day, and putting a conditional at the start of the function that immediately returns if the current day is one you want to exclude. You can use get_datetime() to get a current timestamp, and then use .weekday() on that to figure out which day of the week it is.
